Something I have wanted to do is take an old laptop, convert it to a desktop, create a case for the screen and motherboard, wall mount the case, add a device like a leap motion for touch controls, and use it as a smart home control panel and/or a fancy weather clock with apps installed for sticky notes, photo album, etc.

Unfortunately the newest laptops you have are just a generation shy of meeting the minimum cpu requirements (AVX instruction necessary) for the leap motion in particular, but there may be alternatives.

I also suggest turning them into emulation boxes.

Yet another instance of morphic resonance. Last night I was struggling to figure out why my monitor that I had stored away for a while was not making sound. It has a volume button, so it should obviously have speakers (turns out I forgot it didn't and the volume was for the headphone jack, lol). During my troubleshooting, I grabbed my old Raspberry Pi Lakka box with a bunch of pirated roms. I played Army Men Air Combat and Earthworm Jim on the Game Boy Color, both games I had on my old Game Boy Color when I was young. It brought back a wave of nostalgia. Now I see a video clip of the Earthworm Jim cartoon posted on hexbear today. Are you all spying on me?

At my last job, the lack of basic computer literacy was prevalent across people of all ages, especially younger people. I've noticed people who mainly use mobile devices really struggle with very basic tasks on a desktop, like how to drag windows across the screen or which connector fits into which slot on a dock. I worked with people who struggled with understanding shapes and how to ship back a box with their old laptop. I think a lot of people freak out over small issues with computers that they would be able to resolve themselves if they weren't so intimidated simply because it is an electronic device. My old workplace pampered its users so much that it fostered users who used the criminally understaffed IT department as a crutch.
