Azumanga Daioh is a classic absurdist comedy, well worth watching. Nothing really happens and it's not exactly about anything but that's part of the charm.
Ranma 1/2 is a good comedy with light martial arts and heavy genderbending. I hear there's a recent remake but I haven't seen that.
Bocchi the Rock is an excellent show about a socially anxious weirdo coming out of her shell and making friends through music.
Kaguya-sama: Love Is War is a fun romcom about two brilliant schemers mutually refusing to be the first to admit to having feelings for each other.
