Does Arwen not age after choosing to remain in Middle Earth?

Not really, no.

From "The Tale of Aragorn and Arwen", Aragorn chose to die at 210 (He's a descendent of Numenor) and, when he did, Arwen is described as "not yet weary of her days and thus tasted the bitterness of the mortality that she had taken upon her". Seems to me like she was youthful at that time, only truly understanding what mortality meant with the passing of Aragorn. It then says that the elf-light in her eyes goes out. She then dies a year later in Lorien, under the dying mallorn trees.

So it seems more like she died of grief, but she is officially described as having died of old age.

A lot of minute tolkien lore before or after the hobbit and LOTR wasn't published while Tolkien was alive (silmarillion being an exception). He often changed stuff during the writing process. Christopher (his son) compiled his notes into semblances of finished work but it is debatable whether things would have been written as they are for things like children of hurin and other smaller works. So it's official in that it was published but may not have remained "canon" if Tolkien was alive.

The only other half-elf who died of natural causes after choosing mortality was Elros, Elronds brother and Aragorns great(× a few) grandfather. He lived to 500.

Still counts as vegan if there's consent!

So vegan cannibalism is a thing?

Sure, you would just have to get around the whole "cannibalism is illegal" thing

Crime is more risky than difficult, for the most part.
