In northwest Mexico we call them "hotcakes" (pronounced "jotqueis" in Spanish). I'm not sure about the rest of the country, probably "panqueques".
In the mid 90s, when I first learned about Matthew McConaughey, I did so through a magazine article about a film he was in, I saw his face in one of the pictures and I just thought it was Woody until I read his name.
