I want to believe whoever was dealing with the grant in the office just threw it away or something to delay it long enough to miss the deadline.

To add to the chickpea praise, I have done a mix of half soft tofu, half chickpea flour, and some cornstarch to thicken and then treat it like you would eggs seasoning wise. Made it before for a friend (not vegan myself) and they really enjoyed it. Hope you do as well!
