Same, Dylan used to take me a few listens to get into too. Especially if it was an era of Dylan I hadn't heard before.

The first time I heard lay lady lay I hated it.

I prefer the 60s. Blonde on blonde is an easy favourite. Blood on the tracks is probably third tho.

I do like this version too, the more minimalist version. But personally still prefer the melody of the blood on the tracks version.
