Except most people will use containers because they are easy to distribute and set up. Guess you could try hosting Immich?

Yes, FluffyChat wants ntfy but Element has their own background service in the F-Droid package. Still fits the bill of not using Google infrastructure.

You don't even need to shut it down, newer Android phones (at least on LineageOS) have lockdown mode in the power menu.

Like any other program. It's up to you what you put in said container. Or they could have separate containers.

Well realistically anything well supported is gonna be a "bit old". Your best bet is either a OnePlus 6/6T, Pocophone F1 or a PinePhone/Librem 5. Fairphones are getting up there in support.
