Pretty much done everything in the game at this point, but I could never really figure out if there was more to these ships than the logs inside. I know you can launch them and warp them back to the gravity cannon, but are they actually useful for anything?

Not really. It's just a fun little toy that you can attempt to fly in. There are speedrunners that can actually use these ships instead of the Hearthian ship, but personally, I found these almost impossible to control. I wished the developers had time to invent a better control mechanism for these things.

This is for a challenge run, or they actually manage to make these things the faster way to play the game?

It's definitely not faster since you have to wait for the launchpad to point towards where you're going.

But there is a 100% shipless speedrun which is only 9 minutes slower than using the ship. And using the ship only saves like 2 minutes in any%.

There are some achievements, or at least one involving shooting one into a certain planet. The way they're set up (no steering), you'd either have to do some calculations to plan a course or use trial and error.

There is also a fun missable moment where :::spoiler a scroll wall has some Nomai discussing doing the calculations for sunless city -> sun station!:::

I must have missed that because I was wondering whether you could

spoilerlaunch one of these ships to the sun station. Does the scroll actually give you enough information to do it?

spoilerThe wall is in some homes that are higher up in the city. Eye shrine district I think? They kind of make a 2-floor maze.
