Stargate!
SGA - there was a planned season 6 where Atlantis ended up going through time, then to the triangulum galaxy and more time hijinks. Atlantis Vs Atlantis and peace in the Pegasus galaxy. You can find it on the josephmallozi blog as Stargate Atlantis virtual season 6
SGU - had so much potential and season 2 was good. It ended with the crew going into stasis to travel the gap between galaxies...
SGU would definitely be my answer. You couldn't ask for a better show to do it with either, because of the way it ended it would be easy to have had problems with stasis to explain why some of the actors didn't come back or even the aging of all the ones who do come back. So easy to write around the long time it was off air and still pick up and run with it.

Fringe
Prodigy (Star Trek) just got canceled, that's on my mind right now. They had a lot of story left to tell.
Ash vs the evil dead I really liked this show but it got cut off at the end sadly, it was cheesy but fun to watch
Limitless was sweet spot and had great potential, I liked Chuck and White Collar and Limitless was great series to watch after work and have just fun.
Another Dexter season. I want to see if they can make a worse finale than the two they already did.
Flash forward.
Got cancelled after one season. Obviously it ended without any real answer as to what/why the event in the show occurred.
This has haunted me for so many years...
Seven seasons and a movie
Metalocalypse.
Adult swim deserves to burn in a fiery hell for cancelling that show, really wtf
The Orville. The only show I watched on basic cable at a particular time in ages. Glad they made the jump to hulu, but the 3rd session made me feel like they dumped a couple of seasons worth of plot into it, since they knew they weren't getting another season.
Stargate Universe! The way it ended was so unfair and yet the perfect setup for something new. Thereβs been rumors brewing for years and years at this point but nothing concrete has happened yet.
Raised by wolves: season 2 cliffhanger is not funny at all
Star Trek: TOS
I was gonna say Raised by wolves and Adventure Time, but I see those have gotten the deserved attention so I'm gonna add Kidding. Not because it was left in a bad way, but it was just an amazing show.
...but I mean Raised by wolves just hurts, it was just peaking goddamnit!

Did you like the new show from the creator: The Dragon Prince?
It took a season to get good but it got really good when it did. Season 5 coming out 6 months after season 4 is pretty sweet.
Haven't seen anyone mention The OA yet.
That series needs to be finished!
Dexter. I can't believe it ended after 4 seasons. At least it left on a high note.
