is it a pesto? not qualified to say but it rocks

throw:

  • a bunch of cilantro, like a whole bundle minus the last couple inches of stem
  • about 1/3 of a cup roasted unsalted pistachios
  • the juice of at least half a lime
  • one full jalapeno pepper minus the seeds and such
  • a few cloves of garlic
  • a tablespoon or so avocado oil (or other oil in a pinch)
  • you may need to add a little water to thin it out
  • salt to taste

into a food processor or whatever you have that can pulverize things. no nice cutting of stuff required, just throw em all in there. vegan and great on everything. in my house this is basically the stuff from the stuff

This is pretty similar to chimichurri although the pistachios will make for a thicker sauce with a texture like pesto. Sounds absolutely delicious.
