Honestly I just sliced it up and ate it skin and all, no regrets. I also forgot to skin strips in the eggplant, but I'm a real eggplant boy. Gimme them aubergines.
I get that for sure. If you wanted to separate it, leaving all the skin on is probably the way to go. I think it would be easy to use a spoon to just scoop from the stem out the end on both sides and then just plate up from the stuffing and eggplant combo after removing it from the skin.
