On this day in 1897, the Lattimer Massacre occurred near Hazelton, Pennsylvania when a Sheriff's posse fired into a crowd of unarmed, striking miners, killing 19. Miners, mostly Eastern European immigrants, had been protesting for better pay and union recognition.

A week prior, over 3,000 miners had gone on strike, demanding better pay and an end to the forced use of the company store. On the morning of September 10th, approximately 400 miners peacefully marched to a newly opened coal mine in Lattimer to support a new United Mine Workers (UMW) union there.

After refusing an order to disperse by a Luzerne County sheriff's posse, the posse fired into the crowd. Nineteen miners were killed and several dozen were wounded.

Despite the fact that sheriffs had been overhead joking about how many strikers they would kill that morning, as well as medical evidence that demonstrated miners were mostly shot in the back, the sheriff and seventy-three deputies were acquitted at trial, insisting that they were charged by the crowd.

The massacre was a turning point in the history of the United Mine Workers (UMW), who received more than 10,000 new members in the aftermath of the massacre.

I kinda want to dice up this leftover 5 spice pork loin and coat it in seasoned corn starch and run it through the deep fryer but 1) it's from like last saturday so kinda old and 2) it'd technically render the oil in the fryer no longer halal/kosher? and like idk on the one hand I think that's kinda dumb but I'm not about to go fuckin' up this oil over my casual disrespect for superstitions

sometimes they put honey on these roasted carrots and tbh I really disagree with that, like, a good roasted carrot is sweet enough on its own imo. caramelization

Ask 10-12 people to name a single ingredient, and make something edible from the result. Alternatively, see how much you can stack on one sandwich.

edit: actually, make two sandwich towers and toss a deep-fried plane at them on Monday in honor of the most American holiday

I'm off on monday though so I can't do any 9-11 memorial stuff except at home bawllin-sad

i can't fucking wait to be off though. I'm so tired, and tomorrow will be 6 days in a row. I thought I was doing the sous chef a favor because I thought he worked for me on the day I took off because of my actively bleeding, stitched up thumb, but actually it was another guy who worked for me hahahahahaha so I guess I'm just doing this other guy a favor for nothin'. regret. but he needs it though because now HIS hand is all fucked up! the circle continues

honestly it still doesn't feel as bad as when I was working retail though. Retail sucks lol like this is a lot of work but at least I get to feel good about parts of it. I wish I got fired from retail years ago

What sort of supplies/equipment do you have on hand? Make a big ol batch of fudge? Or Ice cream? or both?

I have steam ovens, an industrial deep fryer, a stove, and several convection ovens, as well as the vegetables and proteins you would expect to supply a large school (but now supplied by sysco)

Definitely make use of the deep fryers since doing that at home is a massive pain
