everything i make with tofu turns out so aggressively mid

I like it in soup / stews the best I think, absorbs the flavors.
I love tofu in noodle dishes! My problem has been trying to use it as a ground meat substitute. Just dont know how to cook it well for that use case.
Are you pressing your tofu? I feel like that's a big part of it. Press it, crumble it in a bowl and toss with some seasonings, saute it and deglaze the pan with soy sauce. I go pretty fancy sometimes but just tofu + oil + soy sauce goes a long way.
