Can't you roll back updates in Steam?
No, not with Bethesda games.
Might depend on the game, but it doesn't look like you can with FO4 unfortunately. Some folks might have to roll back with a cracked/"pirated" version of the game they bought because they chose not to allow rollbacks for the game. Weak sauce Bethesda.
