So I've found out about CoMaps and was intrigued because one of the main features it listed was the inclusion of hiking trails. But for the life of me I can't figure out how to enable them. Is this something that is just a planned feature at this point? Or am I missing something?

Well thing is OSMand does have the trails and I can enable them in map view.

Maybe there is just misunderstanding on my side (I'm not an English native speaker)? I mean these official marked hiking paths. OSMand calls them "hiking routes" so I guess that's a different thing to trails?

Oh yeah, I know what you're talking about. There are some of those in my area on OsmAnd but I'm not quite sure what their purpose is. Maybe they're meant to be pre-defined routes that you can take? All of them around me are overlayed on top of the actual trail, so there are still trails visible when I turn them off.

Yes, these are pretty common in my area. There are hiking groups that maintain them, they are marked IRL too and are great to orient yourself (the marked trails are color coded so you know to stick to blue until you encounter red and continue on red path for example). Also makes it easier to plan routes andsee how to get to some landmarks. In some places, like National Parks, you it may even be mandatory stick to those and not go on unmarked trails.

So I guess those are indeed different things. Well that at least clarifies stuff for me. Hiking trails are all the various paths that are in the forest, and hiking routes are the marked ones.

The technical OSM term for what's missing is hiking route relations. Along with biking they would be a very welcome addition to the Outdoors layer, please file an Issue on Codeberg if there's not one already!

I checked and while there is not a specific issue for this, there is one suggesting multiple features of Mapy.cz (now Mapy.com) that covers it (though not by the specific name, they describe it).

I was Mapy.cz user so that thread pretty much covers all I would love to see in CoMaps:
